Many vegetables are rich in nutrients giving them a spot in our list of super foods that heal.

Word of caution for diabetics: Vegetables are best included in your diabetic diet plan as whole vegetables. Vegetable juices have a higher glycemic index due to the fact that when a vegetable is juiced it becomes high in liquid sugar. The fiber is removed and juice is much easier to be converted to blood glucose. You might be surprised at some of the vegetables that are high in sugar.

Some vegetables high in sugar content are cabbage, carrots, onions, leeks, peppers, beets, corn, rutabaga and tomato. Juicing is not a good idea for diabetics.

Any vegetable that can be caramelized such as onions, leeks and others can be caramelized because of the sugar content in the vegetable
